My dad used to make this for us growing up, and it’s still one of my classic go-to meals for an easy dinner. It’s paleo, and it’s got some of my favorite things – caramelized onions, fat and salt. I usually always have garlic, onion, and coconut oil on hand, so all I need to remember to pick up are the peppers and sausage.
I don’t measure anything, and I throw this together in about 20 – 30 minutes. Here’s what I gathered:

Excessive alcohol consumption isn’t healthy any way you spin it, although we do often try to justify it. (i.e. typical convo with my girlfriends – GF1: well, it makes us happy, therefore it’s good for us! GF2 – I may try not to drink for a month. GF3 – Impossible! [orders another drink]). Even while I’m always trying to cut back, sometimes I’m just in the mood to have a drink (or four). Alcohol can tend to upset my stomach and I’ve gotten even more sensitive to it as the years go on. When I want to go out and let loose for the night, here’s how I attempt to mitigate the health consequences:
