Eggplant parmesan has always been one of my favorite foods, but when I’m out at restaurants I never get to order it because of the breadcrumbs! The fact that I can create a delicious gluten and dairy free version makes me so happy!
My parents used to live in Lerici, a small town in northern Italy on the Mediterranean. As I was going through undergrad and grad school, I was able to live there with them for seven wonderful summers. We loved the food from the area – the foccacia, pizza, pesto, fish and gelato.
